Spinach (or whatever) pies
dough:
500g flour (300 white, 200 whole wheat)
1 sachet (?) yeast
25cl water
mix until homogenous, let rise an hour or 2.
that makes for 8 quite big (individual) pies.
spinach filling :
1 minced, fried onion
1 bag of frozen minced spinach
10cl of soy "cream"
2teaspoons of (light) soy sauce
garlic, cumin, carry, pepper, salt to taste.
add a bit of polenta, or corn flour, until it's not liquid at all anymore.
pre-heat the oven (i have no clue what temperature!).
fill the dough, let your imagination flow for the shapes, be careful to "glue"/stick the sides properly (just put water on the edges then stick them together, or if you want to be sure, you can make glue with corn flour and water). put a bit of olive oil, and provencal herbs on top.
put in the oven, and watch it, coz it's fast.
sometimes better cold.
(local) price: ard 10kc/pie.
flour = 11kc (13x0,3 + 35x 0,2), yeast = 9kc. dough: 20kc!
spinach = 20kc, 1 onion = 4kc, cream (1/2 pack) = 17kc, soy sauce, spices, corn flour = 10kc? olive oil = 10kc? filling: 60kc.
ideas for other fillings :
tomato filling: tomatoes, onions, green olives, (fresh) basil, a lot of olive oil, garlic. can add red peppers, mushrooms, aubergines, carrots, according to the season...
cream filling: mushrooms and leek, soy or coconut cream. lots of spices (muscade, pepper, carry, herbs, ...)
i'd like to have a recipe for a white sour cabbage filling, but so far...
any sauce would do. any remains of the day before.
you can make the filling, or anything, thicker, by mixing some legumes in there. chick peas, beans, yellow peas, lentils, whatever. and gives more protein!
